Crockpot Taco Soup

I have seen sooo many recipes for Taco Soup lately. I have to have some and have it I will!


This recipe has been in my stack of "to make" for way too long. Time to come out of the darkness and into the light.
Or out of the cabinet and into the crockpot. Yeah, that's it!

You'll need:

2 pounds of ground beef
2 cups dices onions
2 cans pinto beans
1 can light kidney beans
1 can whole kernel corn, drained
1 can Mexican-style stewed tomatoes
1 can crushed tomatoes
1 can Rotel tomatoes, mild
1 can dices green chiles
1 can black olives, drained and sliced
1 (1.25 oz.) pkg. taco seasoning mix
1 (1oz.) pkg. ranch salad dressing mix

corn chips

Toppers:
sour cream
black olives
grated cheese
chopped green onions
sliced jalapenos

Brown the ground beef and onions in a large skillet and drain off the fat. Put the beef and onions into the crockpot.

Add everything from the beans to the ranch dressing mix. Stir it up.

Cook on low for 6 -8 hours.

To serve, place a few corn chips into each bowl and ladle soup over them. (I put mine on top)

Top with your choice of garnish.
